Recipe: Prawn fried rice

An all time favourite chinese fried rice made with diced prawns, chicken and bacon. A delight for all meat lovers!

 

 

Ingredients

 

2 tsp oil

250 gms cooked long grain rice

3-4 cloves garlic (chopped)
 
1/3 cup spring onions (chopped)
 
2 stalks leeks (chopped)

1/2 cup sweet corn kernels
 
1 carrots (diced)

2 rashers bacon diced (optional)

1 cup prawns

1 cup chicken (diced)

1 Tbsp sweet chilly sauce

1 Tbsp soy sauce

1/3 cup cilantro leaves

 

Method

In a wok heat some oil untill almost smoking.

Add all the vegetables. Saute.
 
Add the sweet chilli sauce, soy, seasonings and stir fry.
 
Add the bacon and chicken cubes and saute till cooked

Add the prawns. Saute for 3-4 minutes or till cooked.

Throw in cilantro leaves. Add the rice. Mix well.

Serve hot.
